Japanese Steamed Egg

Ingredients

2eggs
1cupchicken stock
1tablespoonJapanese soy sauce
1½teaspoonsMirin (Japanese rice wine)
½teaspoonsalt
2shrimps, shelled
2 pieceschicken, 2″x 2″ sliced
4ginko nuts
2chinese black mushrooms

Beat eggs and chicken stock in a small mixing bowl and strain through muslin to another bowl. Season with soy sauce, Mirin and salt. Pour the egg mixture into 2 narrow bowls (4-inch diameter). Put chicken meat, Shrimps, ginko nuts and black chinese mushrooms into each bowl and cover tightly with microwave plastic wrap. Cook at Defrost (200 Watts) for 9 minutes. Serve hot.
