Ingredients
| 18 | (1 kilogram) | palm sugar |
| ¾ | cup | fish sauce |
| ¾ | cup | water |
| 1 | cup | sliced shallots |
| 1 | tablespoon | chopped small chillies |
| ¾ | cup | pound dried shrimps |
Put palm sugar, fish sauce and water into a 2-quart cooking container, cover, microwave, at High (600-700 Watts) for 10 minutes. Reduce power to Low (90 Wats) and cook for 15 minutes, uncovered. Stir in shallots, small chillies and dried shrimps, cook, uncovered, at High for 5 minutes longer. “NAM PLA WAN” is one of the original Thai dish that goes well with any kind of raw sour fruits such as green mangoes. Green apples can be substituted.*
